The best edamame in the city – at home

In most Japanese restaurants, this dish is served steamed with a dash of salt. But please, we can do better than that. Here’s how to make The Drake Hotel’s version which has a tangy, lemony, tea flavour to it…. and salt (of course):
First, let’s get our facts straight: edamame is rich in proteins and has vitamins A, B, and C. Now that we’ve covered the healthy side, let’s get to the good stuff:
Cut off the stems of edamame pods, then wash and drain the good bits. Rub everything with salt. Then boil lots of water in a large pot, adding 1 Tbsp of salt into the boiling water. This is where you Drake-ify it: now add some green tea to that water and some lemon juice with a dash of cayenne pepper. Boil the edamame for 3 to 4 minutes, drain, and sprinkle a tbsp of sea salt on top.
